Both the memo and the general field are stored in the .FPT file. But the internal format is quite different.
A memo is basically a long text.
I believe a general field contains - in some binary format - both the original "object" required to edit a picture (if it is a picture you store), and a displayable version. That is the reason a general field typically takes 20x the space of the original JPG file - I strongly suggest you keep the picture in a JPG file (or GIF, depending on your requirements), and forget about the general fields.
