Well, I do not have the Professional Edition and so I can't compare the two in a precise manner. But judging the book (Beginng Edition) it explains .Net Framework, the importance of VS.Net, C# basics, etc. In short, if a developer wants to start and learn the foundation of C#, it is Beginning... Not if you will tell me that the Professional edition also explains all of what I am saying.

With Flow Controls, obviously there is not much difference, but a lot of .Net Framework specifics in a C# mindset are well explained in this book (Beginning...)
