I think you could do that without any problem. The main consideration is available RAM. Otherwise, the two instances work like to independent users.
I do it now and then, and didn't encounter any problems. Separate forms, or instances of the same form, in the same application (which I also use) will sometimes cause you more trouble, because they are not really independent in all respects. But you should consider this option anyway, in the long run.
