* Advanced Object Oriented Programming with VFP (Egger)
* Effective Techniques for Application Development with VFP (Booth, Sawyer)

I believe there is at least one chapter on each of them related to n-tier development.

You can also learn a lot about this by looking at some of the commercial frameworks. Most of them come with classes that help you structure your application in an n-tier fashion. Take look at: http://www.visionds.com/VMPSite/ntier.asp, for example.
