In my opinion, I would go with Windows 2000. For the simple reason that most companies will have Windows 2000--rather than XP. However, you will have to ask yourself if most of your clients will have Windows 2000 or Windows XP.
My personal preference is to use Windows XP Professional. It's just as reliable as Windows 2000, but comes with more features. Also, Windows XP has the most updated drivers for your hardware already loaded on the install CD. If you install Windows 2000, you may have to download a driver or two from a website for your latest hardware components.
