This is purely subject of course, but I worked with Novell, Windows NT/2K networks, SCO, and Solaris for the government for 7 years. In order of simplicity (from easiest to most difficult): All windows, Novell, SCO, Solaris. That doesn't mean that it is not possible--not by far. I was fortunate to receive classroom training on all of the network OS's I mentioned, but to be honest, I learned the most installing and maintaining the networks everyday. There is plenty of information on Solaris on the web to get you started and it is 'close enough' to the free or less expensive Unix-flavored NOS's out there that installing those would be a great way to learn. Then go to the many websites with tutorials and help available. Nothing beats a great book to have handy also. The Solaris administrator manuals are rather daunting (strictly due to their layout) as are the SCO versions, which is why I recommend good usergroups and websites. DB2 is another story altogether. DB2 is not difficult at all in comparison and I think you could manage that fine with good resources available. If you have worked with client-server systems using VFP as a front-end then you have a good basic start and all you need to do is start learning! I recommend you focus on one or the other to start (Solaris versus DB2) for a good 3 months and then start on the other while continuing with the first.
