The easiest way I've found is this:
1. Create a new menu
2. Before adding any items, select Quick Menu under the Menu menu option.
3. Remove the system menu options you don't want and add in your custom items.

Give it a try on a test menu. Takes just a couple of minutes, to see if it works for you.
