French school is more in demand here because french is the native language for the majority of citizens of Quebec (and because it's the law...)
The choices between french and english schools is a matter of debate here. Not everyone can send their childs to english school, you have to meet certains rules (if I remember correctly, you can send your childs to english school only if you have been to english school yourself). This law doesn't apply to university however, you can chose the university of your choice.
