I find too many colours distracting. Colours are meant to catch your attention. If there are too many it starts to look like a Christmas tree.
The only time I use a colour in the headers caption is when there is a active filter on that column. And even then I use a soft colour rgb(255,255,128). But then, that's my opinion. There are as many tastes as there are people I guess.
