Not to be picky, but max lenght of the field is 254 characters. 255 is the the max lenght of the string literal.

You might try to concatenate 2 form textbox values together to create a string longer than 255 chars and then post them to the VFP memofield to see if the problem is on the HTML form end or the SQL statement end.
