I was waiting to see of anyone knew of an answer. If it can be done, it invloves the registry or maybe an ini file. However, it looks like what I suspected is right:
I don't think there is a way to do what you're asking. I think a lot of MS stuff relies on Windows settings too much. With that in mind, there is something you can do to make it slightly less anoying. Add the directory you want to save to as one of your favorites. Then it's at least available in two clicks.
After you click save as:
Click on the Favorites button
Then select the sub directory you added.
