I understand this tool is available only in Excel, not in Word.
As a workaround, you can divide your document into sub-documents, for instance, one subdocument per chapter. Different people can edit different chapters.
A master document combines all the chapters (subdocuments), for instance, for printing (page numbering in each chapter continues from the previous chapter).
