If you open, say, drive C: from 'My Computer', then close that, Windows 95 will remember to use 'Large Icons' view for the drive C: folder, not 'My Computer'. So to force Windows 95 to use 'Large Icons' view for 'My Computer', open 'My Computer', set the View to 'Large Icons' (you might want to set 'Arrange Icons' to 'Auto Arrange' as well), then close 'My Computer' right after.
This, however, is not foolproof. Sometimes, Windows 95 will just run out of memory to store all your Explorer folder settings.
I know of no workaround for this, except for trying out Deskey, a shareware program a good friend of mine wrote that'll allow you to save custom Window positions and attributes for all Windows (not just Explorer folders). It's been given numerous shareware awards and stuff.
