I put a text box on the form with the full date:time variable showing. Next to it I put three command buttons. Button 1 adds 15 minutes, button 2 adds 5 minutes and button 3 adds 1 minute. Right clicking on any of the three subtracts the same interval from the variable. This makes it very easy for the user to bump the time up or down. Since the numeric of a date time is seconds, 900 adds or subtracts 15 minutes. 3600 is one hour.
