Section 3.7 of the MSDE's sp3readme.htm file lists the command-line options you can use with setup. What you want to do is go to the Windows Command Prompt and, assuming your CD drive is drive E, type something like:
e:\sqlmsde\setup.exe sapwd=MyHighlyUnSecurePassword
MSDE SP3 does not allow you to install with a blank SA password by default. There is a command-line option that lets you override this behavior, but in the wake of Slammer/Sapphire, I refuse to say what it is. You want it, you find it. <*gd&r*>
