I've been using Office 11 Beta since it first came out and am really enjoying the new features in Outlook. As for stability, Outlook is a little buggy, but still usable, and there is a refresh version to be posted soon.

As for "production" versions, Office 11 will replace Office 10 as the default way to open files in Windows Explorer. You may have to modify the file extensions Open and Edit behaviors to restore the use of Office 10 applications. Alternatively, you can open the application itself and then File | Open to get to your DOC or XLS file.
