Actually there are tons of sheep in Auckland. You can barely make it out of the airport before you run into your first herd. Andy has the ratio about right. I don't know the current numbers but when I was there a couple of times in the late 80s there were 3 million people and 75 million sheep. It is not at all unusual to get caught in a "sheep traffic jam" in the countryside -- one wanders out into the road and the rest follow (like sheep). You just have to wait until they move along.
Try to make it down to Milford Sound if you have the time. And going for a jetboat ride near Queenstown is touristy but fun. My final piece of unsolicited advice <g> is to do some farmstays or homestays if you can. New Zealanders are exceptionally nice people and this is one of the best ways to get to know them a little.
