Assuming that the XML also contains the schema, all you need to do is:

  StringReader sr = new StringReader(MyXML);
  MyDataSet.ReadXML(sr, XMLReadMode.InferSchema);
  // You also might want to:
  MyDataSet.AcceptChanges();
