Exactly. BTW, this not only affects coloring (which is basically a feature added by the UT), but does three other important things: 1) preserve spaces, 2) use a fixed-width font, 3) turn off word-wrap.

Yes, you can. Some are restricted for security reasons, though.
Some of the tags I use most often are:
< B > for bold.
< I > for italic.
< LI > for bullet (a list, with thick points on the left (< UL > and < OL > are not supported by the UT).
I have seen other members use especially codes for color, font, < code > to mark text as code in the middle of a paragraph.
I didn't try if tables work. If it does, it might be useful, sometimes, for alignment.
