I will agree on your statement that email servers should be protected and routing shouldn't be allowed with some way to track the real sender but there are many anonymous remailer servers available on the internet that are up for the sole purpose of sending anonymous mail. No authentication or even logging of the senders of the email are incorporated into these servers.
