I don't know how to do that, but I know can make My Documents be somewhere else:
Right click on My Documents and select Properties. You can then set My Documents to be whatever directory you like. This can make Windows explorer behave as you would like, but if you don't keep your data in this new folder too, it makes your programs less user friendly when opening or saving files.
