In isolation, "plural" seems to sound better, but entity names are not usually used in isolation:

There are "book stores" and "car lots"; not "books stores" or "cars lots" ... or "stores of books", or "lots of cars" (which both may now have changed the original meaning).

By the same token, a Company TABLE or Customer TABLE already implies "plural" (IMO).

Even if we use plural names, we do not generally say "Companies" or "Customers" without qualifying it with a word, like "table"; in which case, "Companies table" and "Customers table" starts sounding rather clumsy, and can easily be confused (when spoken) with (a) "Company's table" or (a) "Customer's table" (different meanings again from the original intent).

But that's just my opinion ... :)
