Actually, this is NOT what happens. What the floorpersons and cameras look for are people who regularly vary their bets by a wide margin. If you bet $5 six times and then bet $200, you're going to get "heat" VERY quickly in ANY house (most will let you do it once, then ask you to leave if you try it again).
Conversely, if you never increase your bet by more than 2x to 3x the amount of your last bet, NO HOUSE will ever ask you to leave regardless of your card counting expertise. When you're counting, and the deck or shoe is very "ten-rich" (the best for the player), you're basically letting a large percentage of your winnings "ride" to a certain "top level" and leaving it there.
I count, and I've never been asked to leave, even when I've won big (my best session was $2000 in five hours on a $5 table at TropWorld in AC).
