You wouldn't have a bell curve, but a pyramid (triangle).
The probabilities for getting each number from 2-12, with 2 dice, are as follows:
2: 1/36
3: 2/36
4: 3/36
5: 4/36
6: 5/36
7: 6/36
8: 5/36
9: 4/36
10: 3/36
11: 2/36
12: 1/36
Since you have exactly one way to get 2 (1+1), two ways to get a 3 (1+2 or 2+1), etc.
Graphing results or probabilities with more than two dice, you will probably get closer to a Bell curve.
