PMFJI -- there are usually two ways for the house to collect from poker.
At lower limit tables, the house collects by means of the "rake" -- money taken out of each pot as the hands are being played. A typical rake in Vegas is 5% with a $4 or $5 maximum. Dealers are responsible for collecting and "dropping" the rake amounts.
Higher limit tables, along with many overseas and cruise ship houses, charge the players a flat fee for a period of time (or a certain number of hands) at the table.
Regardless of the method, these fees, if you're in a regulated house, are posted either prominently in the poker room or at each table. If you don't know, check with any poker dealer or the poker room floorperson -- they'll usually have a card that shows their different games and the house collection method for each.
