In addition to Mark's (excellent) suggestions, you might consider taking the tour of the Studios in Las Colinas, right there in Irving. These studios and soundstages are where movies like "Silkwood" and "Robocop" have been produced, along with most of the "Walker, Texas Ranger" series. It's a VERY cool tour and well worth the time and effort -- also not too expensive.
