Yes. Through the wizard, you can filter the replication "vertically" - meaning you can select only certain columns to replicate. However, these fields will not be included in the initial snapshot, so the subscriber tables will not contain those columns.

The way to include those columns in the replication but ignore any changes made to these columns is to replace the auto-generated stored procedures that update the table with your own.
