Go to table's folder. Right click on file(s), select properties, the security tab.
BTW if you use a COM object at server side and impersonate that running in a user account with necessary rights then you wouldn't need to set security manually for tables. You'd ask how :) OK then if you create a COM server try running dcomcnfg.exe or from control panel components (under 'administrative ...'), dcom components.
