I would suggest having a data dictionary of sorts - a list of the field names that you can filter or search on. Then create a query builder that would allow the user to create a select of 1) the fields to display, and 2) the criteria to limit the display.

I had this in an application at an old company I worked at - looked similar to the filter functionality in the view creator in vfp.
