I have version 6-point-something, but in Spanish (which means I am translating back to English, and some terms might not be identical):
Menu: "Tools | Internet Options"
Select Tab: "Advanced Options".
Under the category "Java VM", I see three options, only the first (Java JIT Compiler enabled) is checked. I am not sure whether this is the correct options to enable Java Applets; you may need some more experimentation.
Or, you might just install another browser, like Opera!
