If Bonnie's suggestion doesn't work (Which I've never tried it that way ... But would be interested to know if that is an option), you may could try the below code...

this.AnimalsDt.DefaultView.Sort = "Left(EarTag, 8), Right(RTrim(EarTag), 5)";
