Kirk, most printers that support PostScript have an option you can see in their setup that sets the level of PostScript compatibility. (Look in Advanced Options or something in the printer dialogs.)
PostScript Language Level 1 is the lowest level. What your client is asking for is the most across-the-board compatible version of the PS that they can get, presumably for reading in another application or conversion process. Almost all printers will make this available, if they support PS at all.
Unfortunately, when people ask for this, it's often not the end of the story. You will also see options such as how fonts should be treated in the same section of the printing dialog. Once you've set to Level 1, things might work just as your client expects, but they may not. IOW, you may find that there are additional settings to be tweaked; it all depends on what they're doing, whether we're talking cross-platform, etc. Don't worry, it will be okay in the end <g>.
