In my experience I have always been able to pay with a credit card, so take your plastic and good luck! Oh and I never pre-arrange. There are ALWAYS plenty of cabs to choose from at the airport, eager and waiting to put your plastic to use.
I spent 6 weeks traveling in Europe, no hotels reserved. Every day was an adventure. Not knowing how it was going to work out made it all the more fun, and gave me a good excuse to practice my high school French.
On one incident I stayed in a convent in Pisa. Trying to communicate with an Italian nun who had had about as much French as I had in high school. Two of us trying to communicate in a language we both barely knew was a riot. Took her 10 minutes to tell me to answer the phone in the room when she called me.
I expect you will see lots of foreign things in Vegas, but the language ought to be easier there! <g>
