For the federal portion of the [damn] taxes, visit the irs' web site and do a search for "circular e". That's the publication that has all the formulas you need.
For the state portion, I can't give you a lead because I got the numbers from my accountant when my wife opened our store. She found out that the easiest way to get the payroll automated was to just say "here, Alex, you are in charge of the payroll now". Two weeks later we "magically" had a program to print the checks and generate quickbooks-readable files to enter them into our accounting.
