Well, personally, I think I would just go for a regular backup.
There is a commercial product, FoxAudit, that doesn't exactly create a mirror table; rather, it keeps an audit trail, that is, a record of what changes were made. From there, it provides the functions required to "roll forward" and "roll back". Roll back means undo several changes, to have the data as they were in a certain date. Roll forward means to recover a backup from a certain date, and then re-apply all changes.\

You could also adapt the same principles to create a mirror table, but an audit trail with roll-back and roll-forward would probably be more useful.
