In IIS manager, you could just right click the web site and use the wizard to create /site1, /site2, and /site3 virtual directories. If you want real separate web sites you should be able to do the same sort of thing to create actual individual sites. I thought there was a wizard for that too (possibly this is just in 2003 Server??)...
