"Carry" is when in a sum (for example), one digit becomes more than 9, so something gets "carried" (or overflows) to the digit to the left.

First, you add 3 + 8. Since the result, 12, doesn't fit in one digit, the digit 1 gets "carried over" to the digit to the left. The situation is similar for multiplications.
