I have SnagIt also and I did the following to capture the menu items:

I first did a shift + printscreen to get the image of the entire desktop into memory, pasted it into Word, then I used SnagIt to CAPTURE only what I wanted from the image I had placed into Word. I copied that image capture into my ultimate Word doc for documentaiton purposes.

I wasn't aware of the Menu capturing option. I'll check that out on Monday.

I use SnagIt and I'm sure it has an option for capturing menus because I remember playing around with automating it so it walks thru all my menus and grabs screen shots of them. Maybe you have an older version.
