In order to have more than one header in one document, you need to insert section breaks and then you will be able to have different headers for each section.

Say your document has 7 pages. Pages 1-3 are have Header1, pages 4-5 have Header2 and pages 6-7 have Header3. To set this up, you need to the following:

- Goto to Insert menu, choose "Break" and then insert a "Next Page" section break just before p.4. Insert another break before page 6.
- From the "View" menu, choose "Headers/Footer" and you will see that the title for the first Header is "Header - Section 1". You can type the header that you want for the pages 1-3.
- In the Header toolbar, there are icons to go to "Next Header", and there you can go to "Header - Section 2". You will see that that same header that you typed for Section 1 is there. In order to get a different header, you need to click on the button "Same as Previous" on the toolbar, and that way it will "disconnect" you from the other header. Then you can type in the header for Pages 4-5.
- repeat this for the next section (or for as many headers as you need).

This also works for the footers.
