John,
<snip>I reviewed your link. What I see is an outfit set up in a cotton-growing state to promote use of cottonseed oil.

I fail to see how The Dept. of Nutrition & Food Sciences at Texas Womans University would be controlled by any industry including the Cotton Industry, most universities require a peer review process based on emperically derived data prior to publication.
Also a Gas Chromatograph DOES NOT tell lies about what is in sample, some of the testing I did included this, BTW my sister is a Food Technologist and she assisted me in researching this.

<snip> If so, we can agree that commercial cookers select oils based on cost rather than concern for the health of customers.

No, I have NOT said that, if you review my previous posts you would have seen my HIGHEST priority was the quality of the finished product, the longer life/stability of cotton seed oil was just a bonus. BTW on another note, accurate temperature control is a significant factor in the performance/degradation of any cooking oil, cottonseed oil handles over temperature better than most.

<snip>I presume you noticed the latest WHO declaration about acrylamides?

You presume wrong, as my research was done back in early 2000, and I was aware of this back then.

My findings were that the higher level of acetic acid in cotton seed oil seems to neutralize the acrylamide production, with no detrimental byproducts.

As you are aware with any product, it depends what barrow someone is pushing in their empire building as to what is put forward, i.e. like the .NETers here.

Also during my testing/evalution there were a number things of apparent concern that arouse, which I researched and latter found to be incorrect, either by testing or the findings were found to be wrong by others, this constantly happens.

BTW High quality cotton seed oil is also light green in colour (like virgin olive oil) but has better cooking characteristics, it is the golden oils (processed) where the problem you describe lies.

Also I am no longer in he game and have nothing to gain from it, I'm just letting others know of my findings.

Have a good day.
Regards N Mc Donald
