Neil,

It seems that you quote your own studies as "proof" then say they are impossible and were some sort of test.

I do not pretend to use a gas chromograph in my daily life. I base my thinking on reputable authorities and the careful evidence they report. Such authorities do not seem to include acetic acid, vitamin C or storage temperature of food as their concerns for acrylamide or transfats. Those ideas came from you. All I can say is that you have a duty to publish your ideas if they are scientifically valid. If they are not scientifically valid or are impossible as you now assert, you will be unable to publish in a peer reviewed journal. This supports my position that such publication is a predictor of credibility.

My motive for posting was to point out that the overwhelming balance of evidence favors monounsaturated followed by polyunsaturated oils. Olive oil is a frontrunner in that league. It is possible that all the authorities are wrong and that you and the students at that Texas University have come up with a simple solution to a complex problem. If this is the case, I repeat that you need to publish in a peer-reviewed journal so that everybody gets to benefit from your discovery.

Regards

"... They ne'er cared for us
yet: suffer us to famish, and their store-houses
crammed with grain; make edicts for usury, to
support usurers; repeal daily any wholesome act
established against the rich, and provide more
piercing statutes daily, to chain up and restrain
the poor. If the wars eat us not up, they will; and
there's all the love they bear us.
