It _IS_ possible to change the structure of an autocomplete table to eliminate the *.FPT memo file. Just make sure no other applications have the autocomplete table open, open the table exclusive, and use the Table Designer to change the "user" field's type from memo to char.

When I posted my original question I had another app running in the background that had my autocomplete table open. This is what prevented me from making changes to the automcomplete table's structure.
