Being a limey I'll defer to American coffee-making skills but I've always understood that coffee shouldn't touch boiling water, as it releases acids at that temp and becomes bitter. Using boiling water on coffee (as is ESSENTIAL when making a decent cup of tea - "cuppa") is what I suspect partly gives certain Brits the bad rep. when it comes to coffee making (wink to Tracy).
