I had similar issues with some of my users as well - they want to be able to just edit at any time yet always be looking at a record that didn;t change while they were editing. I usually judge based on how many will be using the app - I forced them to go into an edit mode (and grab their username with sys(0) so we have an audit trail) in several applications.
