I'm no fry expert, but I caught a portion of a show on how fast-food fries are made and frozen not too long ago (sorta like sleeping at a Holiday Inn Express last night makes one an expert). Apparently the fries are blanched at the factory first, before packaging, and this has a big bearing on how they turn out at the restaurant.
