Bison Bill, where are you? We have to change the history books and the name of his museum, which I have visited on several occasions near Golden, Colorado, home of Keer’s beer (Coors if you wish!).

“Buffalo” meat is very lean, tender and flavorful. I like “Buffalo” burgers and stew! Tommy’s Joint in San Francisco serves Buffalo Stew seven days a week, and we go up there about once a week just to eat it.

There is a story that the Plains Indians who were very dependant upon Buffalo as a source of meat were a lean people. After the Buffalo were essentially killed off and no longer in herds large enough to hunt, the United States government introduced cattle into the diet of the Plains Indians.

The Plains Indians became fat due to the diet of beef and we should learn a lesson from this.
