We didn't deep fry anything in my family either (other than my older sister frying french fries from scratch or donuts from scratch as a school project). It's a good thing too because if I had ever tried southern pan fried chicken by someone who is good at making it when I was young, I would have been begging for it everyday and imagine what my arteries would look like now! :o)
