My ex's mom made a sinfully good pan fried chicken. It was so good it was reserved for special occasions. I am not a fried chicken fan per se but would chow down on it along with everyone else. Yum! And she never lived further south than Springfield.
>We didn't deep fry anything in my family either (other than my older sister frying french fries from scratch or donuts from scratch as a school project). It's a good thing too because if I had ever tried southern pan fried chicken by someone who is good at making it when I was young, I would have been begging for it everyday and imagine what my arteries would look like now! :o)

>>>Good for you. We are not vegetarians, but we eat a lot less fried meat (think Southern Fried Chicken) than we once did.

>>I should add that I've never deep-fried anything in my life*. Fried to me in this context is putting it in a frying pan and cooking until it's the way I like it, so in fact, it reduces rather than increases the fat content.

>>* When I was a kid, my mom would cook frozen french fries in a frying pan in oil. That's the closest I've come to deep-frying at home.
