That story is considered a very important one in Judaism. We read it aloud in synagogue on Rosh Hashanah (the Jewish New Year). I've heard lots of interpretations.
The most obvious is that it's a prohibition on human sacrifice, but I've heard it discussed from Abraham's point of view, from Isaac's, and from Sarah's.
