Between medium-well and well huh? Once upon a time I used to order my steaks really well done. When the server asked how I would like my steak, I would say, "I want to be able to write on the sidewalk with it." My tastes have changed, and now for me the perfect steak is between medium and medium-rare. I find it far more tender, juicy and flavourful that way. Damn! now I've made myself really hungry, and hospital food just falls a little short somehow.

Now, rarely will a surf-turf cover both aspects perfectly - either the steak will be great but the lobster not-so-great, or vice versa....but both were PERFECT. The filet was a perfect "between medium-well and well", a 10-oz seasoned filet of perfection, and the lobster tail (also 10 oz) was heavenly. My family was stunned when they saw a clean plate about 10 minutes later. I intentionally didn't eat the entire day, so that I could enjoy this.
